Sweetcorn Fritters


What you will need:

1 tin sweetcorn kernels
1  1/2 cups cake flour
2 eggs
1/2 cup milk
100g cheddar cheese, grated (1 cup)
1 tbsp fresh parsley, chopped
2 tbsp fresh chives, chopped
5ml baking powder
salt to taste
oil to deep-fry
How To Prepare: 
  1. Sift the dry ingredients together.
  2. Mix together the flour, eggs, milk, cheese, herbs, baking powder and salt.
  3. Add the corn.
  4. Heat oil in a frying pan and drop spoonfuls of the batter into the oil.
  5. Cook until golden brown and puffy.

Serve with any main meal, or great as a snack with sweet chili sauce on the side!

Tuna Bake

    What you will need:
    2 Thick Slices Bread (4 slices if the bread is already sliced) R5.79  (R1.16 - 4 slices)
    3 Eggs (Beaten) - R7.50 (R3.25 - 3 eggs)
    Ground Black Pepper (to taste) - No charge 
    1 Sachet beef Stroganoff Cook-in Sauce - R8.99 
    Garlic and Herb Seasoning (to taste) - No Charge        
    30ml Margarine - No Charge 
    15ml Fresh Parsley (Chopped) - R5.99 (if you do not have a fresh garden)
    1 Tin (170g) Tuna (Drained) - R7.95
    250ml Cheddar Cheese (Grated) +- R24.00
    250ml Milk - R11.99 (2l - R1.50)
    How to Prepare:
    1. Preheat oven to 180C. 
    2. Remove the crusts from the bread. 
    3. Add the butter and milk to the saucepan until the butter has melted, add the bread and mix well. 
    4. Remove the saucepan from the heat and add the tuna, and all the remaining ingredients, mix well.
    5. Dish mixture into a greased oven proof dish and bake for 20-30 minutes, until cooked and golden brown.  Serve with a garden salad or garlic bread or its good enough on its own!  Bon Appétit!
    Personal opinion after preparing: 
    For this week our first budget meal, I prepared and served this meal at our weekly budget dinner and we found it very tasty, however, for variations we decided maybe add onion and or peppers to give it more taste! To stick to the budget, your local Checkers or Pick and Pay sells Peppers at the "salad section" pick a few slices from there if your budget does not allow a whole pepper as they are quite pricey! Maybe try NOT adding a whole packet of the Beef Stroganoff cook in sauce, makes it very spicy (only if you do not like very spicy foods) the recipe is really easy and it is definitely something that can be prepared in a flash!

    Works out to R11.71 per person (4)
     If you do not have a herb garden add R5.99 for the parsley.
