What you will need:
1 tin sweetcorn kernels
1 1/2 cups cake flour
2 eggs
1/2 cup milk
100g cheddar cheese, grated (1 cup)
1 tbsp fresh parsley, chopped
2 tbsp fresh chives, chopped
5ml baking powder
salt to taste
oil to deep-fry

How To Prepare:
- Sift the dry ingredients together.
- Mix together the flour, eggs, milk, cheese, herbs, baking powder and salt.
- Add the corn.
- Heat oil in a frying pan and drop spoonfuls of the batter into the oil.
- Cook until golden brown and puffy.
Serve with any main meal, or great as a snack with sweet chili sauce on the side!
